Blackberry Thyme Champagne is sweet and refreshing. Perfect for a hot day.
Ingredients

1 1/4 cup of sugar
1 1/4 cup of water
1 cup of blackberries
Champagne
Thyme
Instructions

In a sauce pan, add water, sugar and blackberries on medium heat. Stir until surgar is dissolved then bring to boil. Reduce heat to low and simmer for 10 minutes. While simmering, use a spatula to smash the blackberries to release the juice.
Take off heat and let cool for 5 minutes.
Strain blackberry syrup through a thin strainer into a storage container to remove blackberry pieces.
In a champagne glass, for every 1 oz of champagne, add 1 tbsp (2 tsp for less sweet) of blackberry simple syrup.
Garnish with a blackberry and thyme and serve.
