White Fish Crumble

Ingredients (2 servings):
- 1 lemon
- 2 tbsp olive oil
- 3 tbsp panko (Japanese breadcrumb) or ‘normal’ breadcrumb
- 3 tbsp almond powder
- 3 tbsp flour (I used spelt flour, you can use the flour you want)
- 360 g white fish (I used cod)
- 1 tbsp curry powder
- 120 ml low fat cream
- fresh black pepper and salt
- fresh leaf parley

Directions:
- Wash the lemon and grate the rind of the lemon finely. After this press the juice out of the lemon.
- Take a bowl and add the olive oil, panko, almond powder, spelt flour, grated lemon peel and fresh black pepper and salt. Mix this all together (= crumble) . Put in the fridge.
- Pre heat the oven at 180°C
- Pat the fish dry with kitchen paper
-Put the white fish next to each other on the bottom of the oven dish.
- Sprinkle curry powder over the white fish
- Add 4 tbsps of lemon juice at the oven dish and add the low fat cream
- Season with salt and pepper
- Sprinkle with the crumble
- Put in the oven for 20 minutes at 180°C
- And put under the grill for 3 – 5 minutes to color.
