Brekkie for Busy People:

Ingredients:
2 organic eggs
1-2 tablespoons grated Parmesan
1 tablespoon butter
(to taste unrefined sea salt and pepper)

Directions:
1. Crack the eggs in a small ramekin. Prick the yolks with a fork to prevent them splattering in the microwave oven.
2. Sprinkle the Parmesan on top.
3. Place in the microwave oven. Cover with the microwave plate cover. Nuke on high for 40-50 seconds. Adjust the time to your microwave.
4. Drop a pat of butter on the hot eggs. Season with salt and pepper.
5. Enjoy!
