Honey Cake Cupcakes with Caramelized Apples

Ingredients
1 cup blanched almond flour
1 tbsp tapioca flour or arrowroot starch
2 eggs
3 tbsp unsweetened apple sauce
1/4 cup raw honey
Dash organic vanilla extract
Dash baking soda
Dash gluten-free baking powder
Caramelized Apples
2 apples, ribboned or sliced
2 tbsp grass-fed butter
2 tbsp raw honey
1/4 tsp lemon zest
Instructions
Preheat oven to 350
In a bowl, combine flours, baking soda, baking powder, and sea salt
Add in eggs and apple sauce and mix well to combine
Mix in honey and vanilla
Grease Muffin tin or line muffin tin with silicone muffin liners
Pour batter into muffin tins, about halfway
Bake for 12-15 minutes or until a toothpick comes out clean
Make caramelized apples by slicing or spiralizing your apples into ribbons
In a pan, heat butter and add in apples
Let cook until soft (depending on thickness) 5-8 minutes
Add in honey and let cook for 5 more minutes until caramelized and soft
Let cupcakes cool, top with apples and serve
