layered quinoa-vanilla porridge parfait with a choc-banana "mousse" and fresh strawberries

for the quinoa:

1/2 cup of water

3 tbsp white quinoa

1 vanilla bean, seeds

2 tsp stevia sugar

a few dases of milk

1 eggwhite



for the choc-banana mousse:

1 banana

1-2 tbsp of low fat quark or greek yogurt

1 tbsp of cacao powder

2 tsp stevia sugar

1 tsp rawtella or nutbutter of choice



+ 6-8 medium sized strawberries





1. for the quinoa the recipe is: in a small saucepan bring about 1/2 cup of water to a boil. add 3 tbsp of white quinoa 1 vanilla bean (scrape out the seeds first and cook the bean with the quinoa), some stevia sugar and cook on medium heat for about 15-20 minutes. add a few dashes of milk and let cook.

2. for the chocolate-banana mousse the recipe is: in a blender mix 1 banana, 1 heaped tbsp of low fat quark, 1 tbsp of cacao powder, 2 tsp of stevia sugar (and i added 1 tbs of my homemade rawtella as well) and put in the freezer in the meantime.

3. once the quinoa is cooked, take out the vanilla bean and add 1 eggwhite, whisk well so that there aren't any big egg white pieces left in the quinoa-porridge and take off the heat. the eggwhite makes the porridge a little bit fluffier and gives it more volume.

4. cut about 6-8 strawberries into small pieces and then start layering. put 1-2 tbsp of the quinoa-vanilla porridge into a glass, layer 2 tbsp of the chocolate-banana mousse on top and on top of that layer put about 2 tbsp of strawberries. do the whole thing again and you're done!
