EASY CINNAMON APPLE COOKIES {GRAIN FREE, GLUTEN FREE, REFINED SUGAR FREE, DAIRY FREE}

Serves: 6 cookies
INGREDIENTS
1 cup small diced apple
2 teaspoon fresh squeezed lemon juice
1½ teaspoon cinnamon
1 egg
⅓ cup maple syrup
1 teaspoon vanilla extract
1 cup almond flour
2 tablespoon coconut flour
1 tablespoon tapioca flour
½ teaspoon baking soda
Optional: a pinch of ground ginger and a pinch of nutmeg
DIRECTIONS
Preheat oven to 350F and line a baking tray with parchment paper.
Combine diced apple, lemon juice and cinnamon in a bowl and marinate for at least ten minutes.
Add egg, maple syrup and vanilla extract to a large bowl and mix with a hand mixer.
In a separate bowl, combine almond flour, coconut flour, tapioca flour and baking soda.
Add dry ingredients to wet ingredients and combine well using the hand mixer.
Fold in marinated apples with a spoon, then form 6 cookies on the baking tray an bake for 17-20 minutes.
Allow cookies to cool down for a few minutes before transferring to a cooling rack.
Best enjoyed fresh with a cup of tea or coffee!
